Catherine Papon-Nouvel obtient à chaque millésime un vin qui suscite notre admiration. La vinification affiche une personnalité consistante et équilibrée, avec un charme fruité pour Petit Gravet Aîné (deux hectares et demi à côté de Canon-La-Gaffelière) et de la complexité pour Clos Saint-Julien (1,2 hectares sur le célèbre plateau calcaire), nouveau grand cru classé. Ces vins possèdent une forte proportion de vieux cabernets francs qui leurs donnent de l’élégance.
