Dès le nez on reconnaît le beau botrytis, avec ses parfums d’abricot sec et de fruits exotiques fins (papaye et mangue), confiture de pêche. La bouche est onctueuse, la liqueur est d’une exquise finesse, beaucoup de pureté pour ce vin dont le caractère de marne à gypse va accentuer la salinité d’ici quelques années. Splendide !

Autour de Westhoffen, les terroirs alternent entre grès, calcaires du Muschelkalk et marnes de différentes couleurs (noires, rouges ou vertes), ce qui évidemment confère aux différentes cuvées du domaine des saveurs différentes. Sur ses 13 hectares de vignes, cultivées en biodynamie depuis 2009, Étienne Loew et son épouse Caroline travaillent avec soin, labourant certaines parcelles au cheval et laissant les fermentations se dérouler parfois longtemps. Cela donne des vins d’artiste, souvent plus expressifs en bouche qu’au nez, notamment sur les terroirs de grès.
