COMMENTAIRE
Vincent et ses enfants Étiennette et Ghislain incarnent pour les amateurs de chablis un certain idéal de viticulture, il est vrai qu’ils sont tous les jours dans leurs vignes. Leur parcellaire est quasi immuable, tout comme l’ordre de dégustation en cave, ces vieilles caves voûtées du XVIIe siècle au cœur du village et où reposent les fûts. Une partie de la vigne des Preuses a dû être arrachée en 2023 car en mauvais état, pour une replantation prévue en 2030, les amateurs seront donc rationnés d’ici à ce que la production soit totale.
