COMMENTAIRE
Avec quelques 200 adhérents pour 1 100 hectares en apports, la Chablisienne est le plus important opérateur du vignoble chablisien. Les œnologues se sont succédé en cuverie ces derniers temps. Aujourd’hui, Estelle Roy a la responsabilité des 80 000 hectolitres vinifiés lorsque l’année est généreuse. Le schéma de vinification est immuable : cuve inox pour les entrées de gamme et une part de fût croissante dès que l’on arrive sur les beaux terroirs. En premier cru, les valeurs sûres restent les Lys, Vaulorent et la Montée de Tonnerre.
