Il est fin et équilibré, tout en dentelle. Moins puissant que les Preuses, mais néanmoins fin et équilibré. Il sera d'évolution lente, car la fin de bouche retrouve une belle fraîcheur.

Vieille famille de Chablis, les Servin exploitent un très joli parcellaire en premiers et grands crus. Certains vins sont vinifiés en cuve inox, d’autres sous-bois, ces derniers étant souvent marqués par le fût mais c’est le goût qu’affectionne François Servin. En dehors des terroirs de renom, une cuvée de chablis vieilles vignes se distingue quasiment chaque année, elle est issue d’une sélection massale et plantée sur le très réputé terroir des Pargues.
