Riche, gras, très mûr. Un vin puissant, avec un gros volume, où la puissance l'emporte sur la finesse, mais qui retrouve néanmoins de l'équilibre en finale.

Vieille famille de Chablis, les Servin exploitent un très joli parcellaire en premiers et grands crus. Certains vins sont vinifiés en cuve inox, d’autres sous-bois, ces derniers étant souvent marqués par le fût mais c’est le goût qu’affectionne François Servin. En dehors des terroirs de renom, une cuvée de chablis vieilles vignes se distingue quasiment chaque année, elle est issue d’une sélection massale et plantée sur le très réputé terroir des Pargues.
